Our story

Our story is modest, a immigrant named Luis Lopez Guzman coming with a dream to open a authentic Mexican restaurant, being born in a small town of Ecuador, becoming one of the first latino immigrants to make a business in Port Chester, bringing authentic latin food to New York with his wife, later having a three kids, Jamie, Jinhson, Christian the youngest. With them came the second generation of Coyote Flaco, carrying on the Lopez legacy with other Coyote Flacos locations like, Stanfordville, Poughkeepsie, Hudson. After sum time Luis's sons had kids of their own like the twins Kathy,Christian, and also Brian, the third generation is here. Shawn, Ashley, Cesar, Elias, Martin came in the picture later. From a little Coyote passing the traditions to its expended large pack.
